Modern Monk Coffee is a San Diego roaster focused on experimental co-fermentation, using ingredients and active cultures from things like beer, wine and tepache to develop unexpected flavors in green coffee before roasting. Inspired by the centuries-old fermentation traditions of monastic communities, Modern Monk combines those ideas with a modern, experimental approach to coffee. Their coffees are roasted alongside Heave Ho Coffee in Chula Vista, where you can also find bags of Modern Monk available at the café.
